Happy release day to Cynthia! I’m so excited about her release of Angel in Chains! Since she’s invited me here for her release day party I’m going to share some holiday awesomeness with you guys. Every year my mom bakes a bunch of to-die-for pies and cakes, but my favorite is her bourbon chocolate pecan pie. Pecan pie by itself is amazing and practically a must for the holidays if you live in the South, but add in chocolate and bourbon…omg, my mouth is watering right now. So how do you make this goodness, you ask?

What you’ll need:

1 pie shell

1 cup white sugar

1 cup light corn syrup

1/2 cup butter (one stick)

1/4 cup bourbon

1 teaspoon vanilla extract

4 large eggs

1/4 teaspoon salt

1 cup semisweet chocolate chip morsels

1 cup chopped pecans

How to Prepare:

 

1. Preheat oven to 325 degrees F

 

2. In a small saucepan combine sugar, corn syrup, and butter. Cook over medium heat, stirring constantly, until butter or margarine melts and sugar dissolves. Cool slightly.

 

3. In a large bowl combine eggs, bourbon, vanilla, and salt. Mix well. Slowly pour sugar mixture (#2) into egg mixture, whisking constantly. Next, stir in chocolate chips and pecans.

 

4. Pour mixture into pie shell.

 

5. Bake in preheated oven for 50 to 55 minutes, or until set. Serve warm or chill. Optional: add a dollop of whipped cream when serving.

    My maternal grandmother used to make a wonderful cranberry bread made with OJ and nuts, that was so tangy and sweet, with just the right cranberry bite, that we used to eat with cream cheese. And my cousin’s other grandmother used to make this delicious peanut butter fudge, that really tasted of peanut butter. I’ve never been able to duplicate either recipe, or buy them. They were so much a part of my childhood holidays, and I really miss them both- the recipes and the grandmothers.

    Ris a l’amande (hope I spelled it right), a cooked rice sugar and milk mixture that is then lightened with lightly sweetened whipped cream and then served with a boozy cherry sauce.

    Strange But True: I LOVE Pecan Pie But not the pecans. I pick them off w/fork So someone can eat them, But it drives my family Nuts (no pun intended lol) So if I break down and make one I make 2. One w/o nuts and one with 🙂 Never had one w/chocolate tho. Makes me Very Afraid, But That Just Makes It Better LOL
